I cheat. Zap the potatoes for a little less time than recommended,
slice, and put into a hot cast-iron pan with olive oil, salt-free
spice mix, paprika and cayenne. The zapping speeds up the process and
they don't dry out as much. Take them off at just the right time and
you get them crispy on the outside, fluffy on the inside.
