That sounds similar to homemade hash browns, when onion is included, except
I don't think most people include eggs.  They may fry them in the same
skillet the eggs were just fried in, though.

That sounds wonderful.  Of all the things Europeans have tried to get us to
accept over the years... facsism, communism, that Pluto isn't a Planet
anymore... potato omelette sounds like one I would not protest one bit.
