You typicaly dice them. Each die is recogniseable as such in the end product.
It is not like you have to mash the thing of anything.

Beware that it is harder to prepare than it sounds, because the whole thing is
supposed to be think, and turning it over on the pan so you can fry it from
both sides is tricky. In fact, turning the omelette over is sort of a Spanish
idiomatic concept at this point :-)

I bet you can find lots of videos online about how the whole thing is prepared.
