Who knows why they aren't crossing to the gamma quadrant? My guess is plot.
Basically that would be do easy.
But as someone pointed out somewhere, if they did go to the gamma quadrant,
they'd have to mess with the Dominion. My guess is at some point it might
come up in the series, and they'll find a way to discard that idea.
Can't wait to see when the Borg show up...

well they could have done as I said and riged a cloak, and also the dominion
doesn't have ships around or anywhere near the worm hole, they probably could
slip in, (remeber that the defiant's heavy power signature was partially
responsible for the effectiveness of the Anti-Proton scan, it wasn't designed
to be a "cloakable" ship)
