Being the Swede/Danish/German guy that I am, I did my best. Picked up a 3 pound corned beef, made it in a crock pot, 9-10 hours on low. Concannon, roast vegetables and soda bread. I was hoping for leftover corned beef for hash the next day, but people were picking at the leftovers as they walked past the buffet table and complimented me on it...
